
Kate serves Geoffrey's Chicken

Yesterday was A&P's last night in the UK for a long while. They are going back to Australia to start a new phase in their lives. House, kids and long term stability. To send them off proper K cooked us an awesome meal which I just had to get the recipe for: Geoffrey's Chicken.
K says: Here you go, Manne. Sorry the measurements are vague. You kinda do it to suit however many people you're serving. I normally use chicken thighs and white wine instead of red.
GEOFFREY'S CHICKEN DISH
Ingredients
Chicken, cut into casserole pieces
Bacon rashers
Root vegetables (beans, carrots, potato, swedes, turnips)
Flour
Stock
Red/White wine
Butter
Worcestershire sauce
Tomato paste
Method
Flour chicken pieces and fry in pan until golden. Wrap pieces in bacon and place in oven dish.
Put the vegetables in pan and fry until golden, place in with the chicken.
Deglaze the pan with wine, tip in stock and boil. Make buerre manier and thicken stock. Add tomato paste and Worcestershire sauce. Pour over chicken.
Bake in oven proof dish for 45 minutes or until cooked and the top is crunchy and golden.
K added some steamed asparagus to the mix, as a nice garnish on top. Result? Delicious, and no need to wash up since the plates will be completely licked clean.
