
Looks tasty enough... But looks are deceiving!

Since LCHF is all about staying away from carbs and sugars, it is quite tricky to satisfy a dessert craving... Especially if you have a sweet tooth! Found this recipe on the brilliant low carb web site "kolhydrater.ifokus.se" (Swedish) that I intend to try tonight.
Ingredients
3 eggs
0.5 dl double cream
100 gr Philadelphia
coarsely ground nuts
grated chocolate
fresh berries (I prefer blueberries)
Method
Separate the egg whites from the yolks. Beat the egg white hard.
Beat the cream hard, without turning it into butter...
Mix the Philadelphia with the egg yolks. You could also mix in some other flavoring like a few drops of orange or lemon juice, some cinammon or some cardamom.
Cover the bottom of a dish with the nuts.

Mix the egg whites, the cream and the Philadelphia together and pour over the nuts.
Garnish with grated chocolate and / or fresh berries like blueberries and raspberries.
Leave in the freezer for at least 4-5 hours before serving, but preferrably over night.
Update: Tried this, and must admit I was not overly excited by it. While taste was not unpleasant, there was not a lot of it, and it almost verged on the salty/savoury side. Perhaps try crushing berries and mixing them in with the cheese and eggs rather than putting them on top. Also seemed to mess with my stomach a bit. Don't think I will be making this again in a hurry to be honest.
Update: Having given this a bit more thought, it probably would come out much better if treated a bit like making ice cream. Without the sugar of course. But as with a basic ice cream recipe, make a simple custard of beaten egg yolks and cream, flavour it with either some vanilla essence (not vanilla sugar!) or some other sweetener like perhaps stevia.
