One of the many tasty dishes W has introduced me to she simply calls "Aglio et Olio". Couldn't be simpler. Braise some chopped garlic in olive oil until golden, toss with a nice pasta like linguine. I dare you to come up with something tastier that you can cook from scratch in that short time with that few ingredients. Serve with prawns and some vegetables for a really nice meal.
This is a typical dish that becomes inaccessible when sticking to the simple rules of LCHF. Pasta is simply a big no no. So I decided to come up with an alternative, and came up with this recipe. Equally simple, just as tasty, much healthier.
Ingredients (serves 2 small trolls, or 4 mere mortal puny humans)
400gr cooked and peeled prawns
1 small chorizo sausage (50-100gr), sliced
3/4 small cabbage head, shredded finely
3 cloves finely chopped garlic
1 red chilli, finely chopped
1 bunch coriander, chopped
1 small broccoli, small florets
15-20 cherry tomatoes, halved
1 lime
salt and pepper

Method
Steam the broccoli gently.
Melt a knob of butter in a big cooking pot or wok, add in the chorizo and let it release oil and flavour while stirring for a minute.
Add in the shredded cabbage (acting as pasta substitute) and let it soften up until it has a lovely chorizo golden translucent sheen. Season with salt and pepper.
Push the cabbage to the sides and melt another knob of butter in the middle of the pot. Now let the garlic and chilli release their flavours in the butter, then stir it all together.
Fold the tomatoes in, then lower the heat a bit and put a lid on the pot. Leave to simmer for a few minutes to soften the tomatoes up. Remove the lid and press on the tomatoes with a spoon to get the juice out of them.

Put the prawns and coriander in, stir it all together. Squeeze the juice from the lime over it all, add in the broccoli florets and give it all a few gentle stirs to mix it up and make sure the broccoli is coated with all the lovely flavours.
Serve ladled in bowls. Goes really well with a few slices of avocado on top.
