Lately I have been doing a lot of shopping at Waitrose since W lives around Canary Wharf way.
Even before I started shopping there I knew that they stock great food (wonder if they can be persuaded to open a shop somewhere on Queens Road...), but what I wasn't aware of was the effort they obviously put into creating great suggestions and recipes.
More often than not we pick up their recipe recommendations, and mouthwatering pamphlets and food magazines to get some inspiration.
Today we tried out a seemingly simple dish of theirs called "Creamy pork with garlic mushrooms". While that says exactly what it is, I was amazed by the flavours that came out of this rather low effort dish. Cooking this was simple and made me really happy. A perfect dish for those days where you have no inspiration of your own, or just too little time.

The recipe is available online (Waitrose also does a great online job...) so I won't repeat it here.
We decided to use a nice bottle of Cloudy Bay Sauvignon Blanc for cooking as well as drinking before, during and after cooking and it worked remarkably well. Also replaced the Dijon mustard with a wholegrain variety for no reason other than the fact that I like it better.

For those who maintain a Low Carb High Fat eating habit, the creamy pork and garlic mushrooms rock with some Boursin cheese and cauliflower mash.
