
Asparagus tips, ham and hollandaise

Went to Borough Market today to start the day off, and was reminded that the delicious asparagus is in season! As I was walking past the vegetable stalls with their neat bundles of the green spears a delicious looking recipe by Niamh of Eat Like A Girl fame sprang to mind.
As simple as it is delicious, wrap asparagus spears in the finest cured ham you can find, drizzle with a good olive oil and sprinkle some crushed black pepper on top.
Roast in the oven at 180 degrees Celsius for 10-15 minutes turning once to make sure the ham crisps up nicely.
Eat as is or serve with poached eggs and a homemade hollandaise sauce, which is what I did for brunch today.
Or like Niamh, simply dip them in the yolk of a soft boiled egg. Asparagus nirvana.
