This year I intend to spend as many Sundays as possible cooking really slow and long. Stews, pots in the oven, soups, stocks... First out is this amazing pork dish using a recipe from Simon Majumdar of Dos Hermanos.
Pork Vindaloo. And what a vindaloo it is.
Really, this is my favourite type of cooking. Make a paste of some really aromatic ingredients (ginger, chilli, garlic); roast lightly and grind some fragrant seeds (coriander, cumin, fenugreek); mix it all up with pork and add a splash of vinegar and leave to tenderise in the fridge for a few hours.
While doing stuff around the house, like selling loads of shit on eBay and realise you will have to spend days just packing and bloody shipping it all. Sigh.
Whack it all in a pot with a sliced onion, let simmer for hours.
